I’ve made these for years, particularly over Christmas. When I didn’t have mixed spice (thank Michelle!!), I used a mix of cinnamon, ginger, nutmeg and clove. The recipe is versatile that way. I let my nose tell me when I had the right mix of spices. The cloves are meant to be whole for this recipe and pressed into the top as decoration. I like to taste the clove, though, so I use ground clove in the biscuit, about half a teaspoon.Oh… and biscuits are cookies!
125g soft butter (4oz)
200ml sugar (1 cup)
1 egg, beaten
50ml syrup (1/4 cup)
750ml flour (3 cups)
5ml bicarb. (1 tsp baking soda)
2ml salt (pinch)
5ml ground cinnamon (1 tsp)
10ml ground mixed spice (2 tsp)
Cream butter, sugar, egg and syrup.
Sift dry ingredients and add.
Mix into a ball, pinch off pieces and place on greased baking sheet.
Bake at 180°C for 12 minutes or until lightly browned.
Store in airtight container for a day or two for flavour to develop (waiting can be a problem though).
