Magic Chocolate Pudding

No flop and definitely not health-food! This is one of the best comfort desserts for a cold night. Delicious cold the next day too. It’s dressy enough for company, but cosy enough to enjoy by yourself (if you’re the kind that needs a tub of ice cream as comfort). You can dress this baby down or dress it up. To me, it’s the ‘little black dress’ of desserts…. good for any occasion!

Ingredients:
75g self-raising flour – 2.5oz
2 Tblsp cocoa – 2 tablespoons
pinch salt
100g butter – 3oz
100g sugar – 3oz
1/2 tsp vanilla essence – 1/2 teaspoon
2 eggs, lightly beaten
1-2 Tblsp milk or rum

Sauce:
100g soft brown sugar – 3oz
2 Tblsp cocoa
300ml boiling water – 10oz

Directions:
Set oven @ 190°C (370°F). Grease 1.5L (1.5 quart) deep dish. Sift flour, cocoa and salt together and set aside. Beat butter and sugar until pale and fluffy. Add vanilla. Add eggs little by little and add 1 Tblsp flour with last of egg. Gradually stir in flour and mix. Add milk. Pour into dish.

Sauce:
Mix sauce and pour over mixture in dish. Bake just above center of oven for 40 minutes.

      Dis ‘n plesier! Enjoy it. Do let me know how you liked it. Variations go well. I’d sometimes use a little brandy, sometimes whisky, more often, rum, occasionally coffee too. I’ve served it on its own and with ice cream and cream.

    I am not much of a desert maker, will have to try this. Chocolate and raspberries play well together, and I have lots of those in the freezer.

      I had that comment from someone who recently tasted this pudding (like last week). She also said she’s not a dessert maker, but would definitely be making this one. Raspberries… maraschino cherries… ice cream… it’s so flexible. We had it with choc-mint ice cream and it was lovely.
