Ouma’s lemon meringue pie
This was my gran’s recipe and I can definitely vouch for it!Ingredients:
375ml self-raising flour
pinch of salt
3 tsp castor sugar
6 tblsp butter
1 tin condensed milk
3 eggs separated
125ml lemon juice
1 tsp lemon essence
2 tblsp castor sugar
Sift dry ingredients and add butter until mixture resembles fine breadcrumbs.
Press crust firmly against bottom and sides of dish. Bake at 180°C until light brown.
Beat egg yolks well and add condensed milk, lemon juice, and lemon essence.
Pour over crust and bake at 180°C for 10 minutes.
Beat egg whites until stiff. Add castor sugar and beat well again.
Cover pie with meringue and bake at 180°C till light brown.
