My makes-me-want-pizza Pizza Base
This is the pizza base I use… tastes really good!
480g (4 cups) cake flour
10ml salt (2 tsp)
20ml sugar (4 tsp)
10g instant dry yeast (1 pkg… I believe the American package is about the same size)
350ml lukewarm water (11.8 fl oz)
oil to brush
Mix flour, salt and sugar together. Add yeast and mix. Add enough water to form a soft dough. Knead well for 10 minutes until smooth and elastic. Place on a lightly floured surface, cover and leave to rest for 15 minutes. Knock dough down, divide into 4 equal parts and roll each piece into a thin circle of 23cm in diameter. Place circles on a greased baking tray, cover and allow to rise until doubled, about 20-25 minutes. Brush with oil and bake in a preheated oven at 230°C (440°F) for 10 minutes. Remove from oven and cover wtih topping of choice. Reduce heat to 200°C (400°F) and bake for a further 5 – 10 minutes.
