Tuna quiche

This crustless quiche is so versatile. Don’t have tuna handy? Use meat. Don’t have rice, use grated potato. Add veg for substance. Top with tomato…. Add your own seasoning. You can pretty much do as you please with this one. It is a very forgiving recipe too. If you go a little over or under the ingredients list, you’re still fine.

This recipe is tried and tested and a firm family favourite. One of my store cupboard meals. Perfect for picnics too. It can be made in muffin tins too. Make a large double tray, cut into squares and you’re set for finger food if you like.

4 eggs, beaten
1 tin tuna
80ml mayonnaise (5 tablespoons)
375ml (200g) cooked rice (1 1/2 cups)
200ml milk (1 cup)
1 onion
250ml grated cheese (1 cup)
salt, pepper

Beat eggs well. Add remaining ingredients, except cheese, and mix into batter. Pour into a greased pie dish. Top with cheese. Bake at 190°C for 20 minutes.
