Unbought Romany Creams
Ok, so it isn’t the same as our beloved Romany creams, but we take what we can. These are yummy : )
300ml each oats & flour
250ml each coconut & sugar
125g soft butter
2ml bicarbonate of soda
25ml boiling water
5ml instant coffee powder
Mix oats, flour, coconut, sugar and salt. Rub in butter.
Mix in egg beaten with honey.
Dissolve bicarb in boiling water. Add to cocoa mixed with coffee;
mix to a thick paste, then add to flour mixture and combine thoroughly.
Roll into very small balls, place on greased baking sheet, flatten with fork
and bake at 180°C for 12 – 15 minutes.
Cool and sandwich together with melted chocolate.
